Recipe: Jessica’s Pineapple-Mango Lime Popsicles (Refined Sugar Free, Vegan)

Popsicles are the best summertime treat, but the ones I ate growing up were full of… well, actually, I’m not sure what! They were usually sugar free, but I’m sure the ingredient list was a mile long. I got a craving for popsicles a few weeks back, so I decided to experiment with making my own.

I had a bunch of frozen pineapple and mango in the freezer, but I wanted some liquid to help it blend easier. We had plenty of lime juice, so I added that, but I still wanted more liquid to make it easier to get into the molds.

I ended up adding some vanilla almond milk and I have to say, I was quite impressed with my first attempt!

The pineapple marries well with the lime juice to give these a nice punch of tartness.

The mango lends a creaminess and sweetness to balance everything out!

After you blend everything up (following the recipe below), you’ll need to get these into some molds and freeze them overnight.

Make sure you have plenty of room in your freezer. You’ll want a nice level surface. I also find that they freeze better if you put them as close to the back of the freezer as possible.

Jessica's Pineapple-Mango Lime Popsicles

Ingredients

  • – 1 x 16oz bag of frozen pineapple chunks
  • – 1 x 16oz bag of frozen mango chunks
  • – 1/2 cup lime juice
  • – 1 cup unsweetened almond milk (vanilla or original)

Directions

  1. Add all of the ingredients to a blender. NOTE: The almond milk and lime juice will start to “curdle,” so don’t combine them until you pour into the blender. I haven’t had any issues putting both in together right before I blend, but you can also blend in the almond milk first, then add the lime juice separately if you are concerned!
  2. If you have a high speed blender like a Vitamix, blend on the highest speed using the tamper to alternate pushing down towards each of the four corners. If you have a regular blender, you may need to add more liquid (water or extra almond milk) and/or let your fruit soften a bit to get it to blend.
  3. Blend on high until everything is incorporated, about 1-2 minutes.
  4. Pour/scoop mixture into popsicle molds.
  5. Freeze overnight and enjoy!

    It’s 34 degrees in Ogden tonight. Sad. Not a good night for popsicles. Next week will be better.

    Where did you get the lime juice? Is it only lime or are there other ingredients as well? Looks delicious! Thanks!

    • I just pick it up at our local grocery store! However, for ingredients it says: lime juice from concentrate (filtered water, lime juice concentrate), essential lime oil, potassium metabisulfite as a preservative. So probably not the BEST. But I like to keep it on hand in case we don’t have fresh limes.
