Before we switched to a whole food, plant-based diet, I did not like oatmeal OR strawberries. Just to show how much your palate can change… I’ve been eating oatmeal packed with fresh strawberries for breakfast almost every single morning for the past two months!

With my newly discovered love of oatmeal, I decided to challenge Brian to create a better oatmeal than mine. He accepted my challenge and in true Brian fashion, he completely winged it on the morning of the challenge, making something he had never put together before. And of course… it was delicious.

Jessica’s Strawberry Chocolate Oatmeal

For my oatmeal, I love to combine fresh strawberries with a little bit of crunchy granola and chunks of dark chocolate. The chocolate melts slightly from the warmth of the oatmeal and it’s almost like eating dessert for breakfast!

Jessica's Strawberry Chocolate Oatmeal

Ingredients

  • – 1/2 cup old fashioned rolled oats
  • – 2/3 cup water
  • – 1 medium banana, sliced (the more ripe, the better!)
  • – 1 Tbsp ground flaxseed
  • – 1 to 2 cups fresh strawberries, chopped
  • – 1 to 2 Tbsp granola (I use Engine 2)
  • – 1 Tbsp vegan chocolate chips (I use broken up Lily’s chocolate bars)

Directions

  1. Measure oats into a microwave safe container. Be sure your container is large enough, as the oats will expand and the water will boil. I use a 4-cup Pyrex container.
  2. Add water to oats and stir.
  3. Microwave for 2 minutes 30 seconds.
  4. Add ground flaxseed and sliced banana. Smash with a fork to break up the banana and mix to incorporate with the oats.
  5. Top with strawberries, granola and chocolate chips.
  6. Enjoy!

*Makes 1 serving.


Brian’s Chai Tea Apple Oatmeal

Brian came up with a really great way to add extra flavor to his oatmeal. Instead of cooking his oats in water, he used chai tea for the liquid. He also sautéed apples with cinnamon, nutmeg and allspice and finished it off with some lightly toasted pecans.

Brian's Chai Tea Apple Oatmeal

Ingredients

  • – 1/2 cup old fashioned rolled oats
  • – 1 cup Chai Tea
  • – 1 medium banana, sliced (the more ripe, the better!)
  • – 1 Tbsp ground golden flaxseed
  • – 1 large Honeycrisp apple
  • – Dash of cinnamon
  • – Dash of nutmeg
  • – Dash of allspice
  • – 1 Tbsp chopped pecans

Directions

  1. Brew the tea in 1 cup of boiling water.
  2. Dice the apple. Heat a small saucepan to medium. Add diced apple and 2-3 Tbsp of water. Add spices (cinnamon, nutmeg & allspice), stir and cover. Steam for 5-10 minutes, stirring occasionally, until the apples have softened. Uncover and continue cooking until the liquid has reduced and sticks to the apples.
  3. Heat a dry pan to medium. Add chopped pecans and heat for 20-30 seconds, tossing continuously to toast.
  4. Measure oats into a microwave safe container. Be sure your container is large enough, as the oats will expand and the water will boil. We use a 4-cup Pyrex container.
  5. Add tea to the oats and stir.
  6. Microwave for approx. 2 minutes. If your tea is still hot, it may not take as long.
  7. Add ground flaxseed and sliced banana. Smash with a fork to break up the banana and mix to incorporate with the oats.
  8. Top with apples and toasted pecans.
  9. Enjoy!

    I just wanted to suggest a video idea. Perhaps how much do you spend a month on groceries on your diet and/ or doing a monthly grocery budget challenge on your diet.

    Hey you two,
    We have been watching you two for some time now. We live in the mountains of North Carolina and get you on our ROKU setup. I’m not sure if that counts as a view on YouTube or not, my wife watches you more. I was born and raised a vegetarian back in the fifties, my parents wanted to live as healthy as possible, so after they got married, they quit smoking, drinking, and went vege. I tried meat a few times in my teenage years to see what I was missing, but being raised vege I could never get over the thought of eating something that used to walk around and make noise. Growing up our family ate oatmeal every morning before work and/or school and I still do most of the time, I’m 62 now! My wife and I were married in 1975 and she went vege two years later so she didn’t have to cook two meals each time, she has always been happy she did though. Both of your oatmeal dishes looked good, I voted for Brian and my wife voted for Jessica, so I guess our votes kinda void out. My favorite way to eat oatmeal for all those years and still to this day is cooked till semi-thick, a splash of rice dream, and a table spoon of honey! I am a plain sort a guy 🙂 Keep up the good work.
