It’s time for another “What We Eat In A Day” video, but this time we’re taking it on the road! How do you stay healthy when on a road trip? PLAN AHEAD! In today’s video, we’ll show you what we ate during a day of 9+ hours of driving while staying on track with our whole food, plant-based diet.
Breakfast
We don’t normally eat breakfast these days, but on this particular day, we woke up a lot earlier than normal (around 6am) to get packed and get on the road, so we decided to have a bite to eat around 10am.
I threw a leftover homemade muffin into our bag and we shared that. We also brought along a few ripe bananas that we had on hand.
Bananas are a great snack for the road and we ALWAYS seem to have a few that need to be eaten before we leave on a trip anyway.
I can’t wait to share this muffin recipe with you guys. It is a Butternut Pecan Muffin and we will be sharing it on the channel very soon!
For today’s road trip, we were actually driving up to Rochester, Minnesota, which is about 7 1/2 hours from St. Louis. The day started out kind of gloomy and wet, but eventually we hit blue skies!
Drinks
You might wonder what we drink while on the road. My go-to is always water. I actually bought this Brita Filtered Water Bottle a few weeks ago and it is great for travel. I can fill it up anywhere along the way and it has a built in filter!
Lunch
I usually research our route to see if there are any good plant-based eateries that we should check out on the way. I try to avoid places that are too “junk food” vegan in favor of places that seem to stick closer to whole food, plant-based.
I found an amazing place at NewBo City Market in Cedar Rapids, Iowa. This market was a super cool space in a really nice area of the city. They had several shops and food vendors set up, including a place called The Full Bowl.
The Full Bowl serves up organic whole foods that are cooked from scratch. At any given time, they feature three different rice bowls on their menu, including the No Coast Bowl, Chana Masala, and a weekly special.
We ordered the No Coast Bowl, which includes black beans, onions, garlic, brown rice, a lemon garlic sauce, green onion, red cabbage, salsa and house-made vegan cashew sour cream.
We also got one the weekly special, which was Bílá Fazolová – their take on a traditional Czech dish. It had white beans, onions, garlic, cashew sour cream and house-made vegan Czech style sausage, all served over brown rice.
We got a side of their Lemon Orzo Pasta Salad as well. Everything we had was DELICIOUS and we left feeling great before getting back on the road. We will definitely be heading back next time we are in Cedar Rapids!
Snacks
We don’t tend to snack a lot, but it’s always good to have healthy options on hand when traveling. In the past, we would have raided the gas station at every stop for unhealthy candy and snacks, so having these options on hand helps to curb those temptations. For us, it’s all about setting ourselves up to succeed.
Brian brought along some cinnamon apple chips. The only two ingredients in these are apples and cinnamon. Yes, he could also just eat an apple, but this is a nice crunchy snack for the road.
I chose a bag of Brad’s Crunch Kale Chips in their “Cheeze It Up” flavor. These are a rare treat that I enjoy from time to time. They have a really clean ingredient list and they are air dried – never baked or fried. I love the fact that these have no oil.
Dinner
After a long day of driving, we arrived at our Airbnb in Rochester, Minnesota! We checked out the kitchen we would be using for the next week and unpacked ALL of our stuff, and then it was time for a quick dinner.
I knew we wouldn’t have much time before we had to hit the road again for our next stop of the day, so I made these mason jar salads the night before and we kept them in a cooler as we traveled.
This recipe for my “Buffalo Beans & Greens Salad” will be coming out on our channel soon! It was nice to have both of our salads ready to go – we just poured them into bowls, heated them up for a couple of minutes, and added the dressing that I packed in a separate container.
After dinner, we drove another 90 minutes to Minneapolis where we were seeing a concert that night! We had some beautiful views and a lovely sunset on the way.
We saw a band called Inhaler at First Avenue in Minneapolis and then drove back to the Airbnb for the night. We didn’t eat anything else after dinner.
So there you have it! That is how we planned ahead and stayed on track while on the road. If possible, I always love to scope out a local place to enjoy, but sometimes you just won’t find any good options. In that case, we always recommend packing your own food and looking for gas stations that have a microwave to heat anything up along the way if needed.
