We’ve been working from home for going on what feels like 2 years amid the global COVID-19 pandemic, so we thought it was time to show you what our lives are like these days. We filmed what we ate and also showed you a bit of our daily lives! Check it out and be sure to watch the video for more.

What We Ate

Brian started out the day with his “Banana Sandwich,” which you might remember from one of our previous What We Eat In A Day videos. This time he took two slices of Ezekiel Bread (Cinnamon Raisin) and topped them with some Wanna Date? Cinnamon Date Spread. Then he sliced a banana in half and squished it between the two slices of toasted bread.

I have actually been skipping traditional “breakfast” and eating two meals a day. I usually eat my first one around 11:30am, so I started getting really hungry while Brian was cooking lunch. I decided to toast a whole wheat pita (from Trader Joe’s) and top it with a bit of Good Foods Buffalo Dip.

For lunch, Brian put together an amazing dish using random stuff we have in the pantry. We had this Mesa de Vida Creole sauce, some chickpea & red lentil risoni from Trader Joe’s and a bunch of veggies.

The Creole sauce was really good, but they are super expensive. I found this one at Whole Foods. Brian is going to try and replicate his own version so we can put out a recipe for this tasty lunch.

We had some sliced red onion, so Brian grilled those up on his fancy Granitestone Diamond pan.

He also threw in some zucchini, red pepper and tofu.

The tofu was pressed using our Tofuture Tofu Press. He just cubed it up and tossed it in, coating everything with the sauce.

It turned out DELICIOUS! I can’t wait to get this recipe together for you guys very soon. You can swap in different veggies, sauces, etc. and it is such a great dish to use up all of that random stuff you have on hand.

After lunch, Brian got back to work and snacked on an apple.

Later in the evening, we had… what else? SALAD!

We cooked up a batch of our Spicy Buffalo-Style Chickpeas using the garbanzo beans I cooked in the Instant Pot (see below under “What We Did”).

We also made the Ranch Dressing from The Healthspan Solution, which paired perfectly with our Buffalo Chickpeas!

We used iceberg lettuce, spinach, zucchini, carrots, celery, red onion, nutritional yeast, chopped dates and black sesame seeds. This was a GREAT salad! It’s my new favorite.

After dinner, I made my favorite chocolate nice cream shake and Brian ate an orange.

I actually filmed the recipe for this nice cream shake last weekend, and that video/recipe will be out VERY soon. 🙂

Brian told me he “won” the whole food plant based dessert challenge. Whatever, Brian. LOL.

What We Did

Since we are home ALL day, we thought we would also show you a bit of what our days are like working from home.

I started out the day around 8am with a marathon cleaning session in the kitchen. For those who wonder why our kitchen it always clean, this is why. LOL.

Of course we spend a lot of time hanging out with (and feeding) our two crazy (but adorable) Pomeranians, Oliver and Scout!

Poor Scout hurt her paw so she has the CONE OF SHAME right now!

It wouldn’t be called “working from home” without some work! I have conference calls throughout the week for my day job.

Brian works for a podcast network, so he worked on editing (and recording) podcasts all day! Here’s a montage of that.

I purchased a 25 pound bag of garbanzo beans from Amazon the other day, and it happened to arrive the day we filmed this! So I was super excited and spent a good bit of the day experimenting with cooking them in our Instant Pot.

    Just be very careful how you store the chick peas. They can have weavils. They are evil.
    I had a kitchen disaster last year with them.
    Freezing them for a few days can help. I found some articles about how to store them with peppercorn and other herbs in layers.

    I think you guys need to do some research on supplements. Our bodies have a natural balance of hormones, vitamins, minerals, etc. It’s only when we’re low or missing something that we should explore taking any supplements or we upset that natural balance our bodies have. In other words we should use supplements as replacement therapy only. For vegans eating a healthy whole food plant-based diet, that would be Vitamin B12 and sometimes Vitamin D because we don’t eat foods fortified with Vit D and only if we don’t get enough sun on our skin to manufacture Vit D. If you want more Omega 3 FAs, eat it naturally as flax or chia seeds. We eat 1 T ground flax seeds on our oatmeal each morning, but the ground flax seeds could go on salad or other food too. The requirement for Vitamin B12 is very low. I know we get a fair amount on all the greens we eat in our salads, and it’s difficult to find a low-dose supplement. I take one 1000mcg tablet twice a week. And for vitamin D I don’t take it at all on a day I can get into the sunshine in the middle of the day for 20 minutes or so. Otherwise I take a 2000 iu capsule which for me keeps me around the 20-40 ng level which is the recommended range. Some feel that Vit D supplements of any strength might not be healthy-that we should get all of our Vit D naturally from sun exposure.

    So be very careful with supplements. Dr John McDougall has written a clear explanation on his website. So have other doctors in the plant-based arena like Esselstyn, Barnard, Klaper, Jeff Novick, and there are more. You might want to reconsider the taking of supplements except for replacement therapy.

    Question: How many potatos meet your daily hungry need while on a 10 day Mary’s-Mini?
    also did you do any sweet potatos or red yams.

    Its ok, because once you l have lost all that weight your need to find the courage not to over buy too many new clothes…Healthy is great is it not?..I am on my way to being a gutless wonder myself…Lol..

    Today I made the chili avocado citrus bowl from the health span solution cookbook. It was delicious! It took me a while to find the pomegranate arils. Also the dressing didn’t blend in my blender because there wasn’t enough of it, so I just smashed it all together and poured it on anyhow.

    I have 2 comments, and I’m not sure where either belongs.

    1. I’m thrilled to see Jessica’s looking so well and happy again since getting back and staying on the wagon.

    2. Somewhere in a recipe recently you guys showed using Pacific Veggie Broth. It’s twice the price and no better than Trader Joe’s veggie broth (we use low sodium) that’s only $2 a quart-I know you guys regularly shop Trader Joe’s so look for their veggie broth and see what you think.

    also check out seamoss it has 92 0f the 101 vitamins and minerals i take that as a supplement it helps me with cravings and over all a fabulous way to get vitamins and nutrients in . i also notice nails and hair grow way faster
