After the feedback we got on our first What We Eat In A Day video, we knew we’d have to do another someday! Well, that day is here and we present to you: What We Eat In A Day – Weekend Edition.

If you haven’t already figured it out, we don’t mind eating the same things over and over. We usually take the same thing to work for lunch at least three or four days out of the week. On weekends, we have a little more fun with our meals. We still eat our massive salads, but we like to mix it up for breakfast and the other meal of the day. Breakfast

Brian has to leave early for church on Sundays, so he usually makes a quick “Banana Sandwich.” This is literally just two slices of Ezekiel Bread (Cinnamon Raisin), topped with a bit of nut butter, nutmeg and ground flax seeds. Then you just slice a banana in half and squish it between the two slices of toasted bread, and you have a nice, portable breakfast!

I don’t eat a ton of smoothies, but if I do it is usually on a weekend morning since I have more time. In general, I find that I would rather just eat fruit instead of drinking it, but smoothies are a nice way to get in extra greens and other things that are good for you!

My smoothie is usually about 1 1/2 cups of unsweetened almond milk, 4-6oz of frozen spinach or kale, and a handful of frozen mango, pineapple and banana. I also throw in a tablespoon of ground flax seed and a small piece of fresh ginger. The ginger adds a nice little spicy kick that I quite enjoy with the sweetness from the fruit.

Lunch

Brian usually goes out to eat with his family after church on Sundays, and one of the places he likes to go is Ruby Tuesday. They have an all-you-can-eat “garden bar,” which has plenty of fresh veggies to make giant salads with. They don’t have a “compliant” salad dressing, so Brian just uses plain balsamic vinegar.

I was at home while Brian went out to lunch, so I just made one of my normal giant salads. I’ll be publishing a separate video / blog post with that “recipe” very soon, so stay tuned for that!

Dinner

We had some tofu that needed to be used up, so we decided to grill some up on our Griddler (using the recipe you can find here). We paired this with a generous portion of our tahini roasted veggies. It was a very tasty and filling meal!

    Hi, I am finding you guys really inspiring. May I ask what you drink day to day, do you drink coffee or tea with plant milk? Here in the UK we love our tea, I am an ethical vegan and use cashew milk, would this fit in with this way of eating?
