So many of you have been waiting for Brian to recreate some of the dishes we had on our trip to England, and the wait is over… kind of! Brian has been working on several of these, and first up are his Minty & Spicy Peas, inspired by the Macho Peas we had at Nando’s in London.

If you remember, he actually enjoyed the peas at Nando’s so much, that when Martin The Great Potato Mage and I challenged him to cook us a meal in Nottingham, he started working on recreating them there! They were a part of the delicious meal he served us, and I’m so excited he was able to re-capture that at home.

The ingredients for this one are quite simple: peas, fresh mint, fresh parsley, garlic, liquid aminos (or low sodium soy sauce) and red pepper flakes.

I love the use of fresh herbs in this dish – especially the mint!

For the peas, you can use frozen, canned or even fresh. Brian has tried all three and prefers the frozen.

Brian's Minty & Spicy Peas

Ingredients

  • – 2 cups of peas (frozen or canned)
  • – 2-3 cloves of garlic (minced) OR 1 tsp garlic powder
  • – 1/2 tsp red pepper flakes
  • – 1 tsp low sodium soy sauce, tamari or liquid aminos
  • – 1 Tbsp fresh mint, finely chopped
  • – 1 Tbsp fresh parsley, finely chopped
  • – Dash of cayenne pepper (optional)

Directions

  1. Heat a small saucepan to medium-low. Add peas and dry sauté until it is heated through and just begins to brown.
  2. Stir in minced garlic and cook until fragrant, about one minute.
  3. Stir in red pepper flakes and cook for another minute.
  4. Add in soy sauce, stirring to coat peas.
  5. Add in mint and parsley, stir, heat for another minute and serve!
