Sometimes a simple (yet tasty) side dish is just what you need to compliment a nice meal! Coming off of our recent “10 Pound Challenge” and eating pretty much the same thing every day for several weeks, we were both in the mood for some special meals. Brian has been experimenting with a black bean burger, and I thought his sweet & smoky corn would be a perfect addition to the plate!

This recipe is something Brian has thrown together several times in the past, but he never really pinned down an exact recipe for it, so I finally convinced him to do it!

The ingredients are pretty basic… you just need sweet corn, dates, liquid smoke (or smoked paprika), liquid aminos, onion powder and garlic powder.

The sweetness of the corn and the dates marry so nicely with the smoky undertones of the dish. Check out the video here and get the full recipe below!

Brian's Special Sweet & Smoky Corn

Ingredients

  • – 1 x 16oz bag of frozen sweet corn (you can also substitute 2 x 15.25oz cans of no salt added sweet corn, drained OR 3 cups of fresh sweet corn, cut off the cob)
  • – 3 x pitted Medjool dates, finely chopped
  • – 1 tsp liquid aminos, low sodium soy sauce or Tamari
  • – 1/2 tsp garlic powder
  • – 1/2 tsp onion powder
  • – A few dashes of liquid smoke (or substitute 1/2 tsp smoked paprika)
  • – OPTIONAL: Salt and pepper to taste.

Directions

  1. Heat a saucepan on medium low.
  2. Add in chopped dates, liquid aminos and a splash of water. Stir for a minute until the dates start to soften.
  3. Add in corn and remaining ingredients, along with another splash of water. Stir to combine.
  4. Cover and cook for 5 to 10 minutes, stirring occasionally. Enjoy!


This dish is perfect for summer! You can serve it alongside a nice plant-based burger and a fresh salad, like we did. Or maybe grill up some carrot dogs! It could even be used as a topping on your burgers or dogs. Either way, this simple side dish is sure to impress.

    Wow, this is delicious! I am going to try it with Coconut Aminos since I am sensitive to soy. It is such a small amount that I used the Liquid Aminos but now that I know how much I love it, I will make it even healthier for myself. Thanks!

    First of all, LOVE YOUR POSTS. I made you corn recipe three weeks ago and we’ve had it twice since then. I made three adjustments.
    1. 1/2 an onion (red) diced.
    2. 1/2 a red/yellow pepper diced
    3. A tablespoon of jalapeno peppers (diced real small)
