If you’ve been following along on YouTube, you know that we are right at the end of our “10 Pound Challenge.” Brian was 10 pounds away from losing 200 pounds total and he really wanted to hit it by June 22nd, which is our two year anniversary of starting this crazy whole food plant based adventure!

I decided to join in and we’ve been making our best efforts over the past month to hit our goals. So we thought this was a good time to show you what we’ve been eating! We are pretty repetitive with our eating habits, so this video represents pretty much every day for the past few weeks.

Kicking Off The Day With Some Prep!

Our schedules have been a lot different lately since both of us are working from home. Usually Brian stays up really late and sleeps in, while I get up early and go into full on “productive Jessica mode.”

On the day we filmed the video, I started out the morning doing some veggie prep for the week. I prepped the following:

Zucchini (Julienned using our mandoline slicer)
Carrots (Shredded using our food processor)
Celery (Small dice using our veggie chopper)
Red Onion (Small dice using our veggie chopper)
Butternut Squash (For making Healthspan Solution “Cheesy” Sauce; roasted in the oven at 375°F for 40 minutes)
Banana Peppers (We remove the seeds, slice peppers using our food processor, put into a mason jar and cover with white vinegar + a teaspoon of salt. Then shake and let sit at least 24 hours before eating. Be CAREFUL handling the seeds and insides because it will burn!)
Broccoli & Cauliflower (Broken into small florets; we keep these in the fridge to eat and throw into salads throughout the week)

Vitamins & Supplements

Around 9am, I take my Vitamin D and iron pills. I get bloodwork done yearly and take the amounts my doctor recommends. Remember, we aren’t experts, we are just sharing our experiences!

Brian also takes Vitamin D and we both take a multi-vitamin. We have been taking Dr. Fuhrman’s Women’s / Men’s Daily Formula, which are linked below in the “Featured Products.”

Jessica’s First Meal of the Day

After prepping, it was time to eat my first meal of the day. I’ve been skipping “breakfast” and eating around 11:30am.

I usually start out with a small whole wheat pita from Trader Joe’s. I put it into the toaster for a few minutes and slice it in half afterwards. Just be careful when slicing… steam will escape and burn you!

Then I add a bit of Butternut “Cheesy” Sauce (recipe here) and top it with a few soy chorizo crumbles, also from Trader Joe’s.

NOTE: I don’t actually recommend eating the soy chorizo because it has way too much sodium AND some oil, but I really like adding just a tiny bit on top. I’m trying to switch to something better, but I wanted to show you exactly what I’ve been eating!

I have been batch cooking a TON of spaghetti squash once a week in the Instant Pot. Check out our video/post about that for more info! For my main dish, I added some of that to a large bowl along with some beans we made earlier in the week. More about the beans in a bit…

I mixed in some of the Butternut “Cheesy” Sauce with the spaghetti squash and topped everything with a bunch of Chili Garlic Cholula Sauce. NOTE: This is NOT the “original” Cholula sauce, which is super spicy. The Chili Garlic flavor is very mild.

I finished out my meal with a pink lady apple for dessert!

Brian’s First Meal of the Day

Brian has been eating his first meal of the day around 2pm. His first meal is very similar to mine, but instead of spaghetti squash, he usually makes a 10oz bag of riced veggies, like this Green Giant Riced Veggie Cauliflower Medley.

He adds in some of the “Cheesy” Sauce and beans to his as well and mixes everything up. For the beans, we change out which ones we make each week. Sometimes we make Brian’s Chorizo-Spiced Pinto Beans or our Spicy Refried Pinto Beans.

For this week’s beans, we cooked two bags of Hurst’s HamBeens 15 Bean Soup in our Instant Pot and added in some sautéd peppers and onions. We might post a video of this in the future, but we are still trying to figure out the perfect cooking times! It can be a bit tricky since there are so many different sizes of beans in the mix.

He also had a banana and a giant Honeycrisp apple!

Salad Time!

For our other meal, we usually eat together around 6:30pm. You can probably guess what it is… SALAD of course!

We mixed everything together into one giant bowl and then divided it into two smaller bowls.

Today our salad included the following (divided into two servings):

– One 5oz bag of Trader Joe’s Spring Mix Lettuce
– Half a head of iceberg lettuce
– Red onion
– Zucchini
– Celery
– Carrots
– Banana peppers
– Broccoli
– Chopped dates
– Nutritional yeast
– Freshly ground black pepper
– Vegan ranch dressing (we used a recipe from The Healthspan Solution book)
– Spicy Buffalo-Style Chickpeas (recipe here)

And that was it for the day! Sometimes if Brian gets hungry later on, he will have some of the raw broccoli and cauliflower mixed with mustard and nutritional yeast. I usually have a piece of fruit or a Pineapple Mango-Lime popsicle, but I wasn’t feeling it today.

    I love you content it is great and you both inspired me.

    I have lost over 50 pounds so far and watch your videos for inspiration. I am so proud of both of you and I know that sounds strange coming from a someone you don’t know. I did however spend alot of time in the shadow of the arch across the river a bit.

    Do let us know when you figure out the hambeans cooking time in the instantpot. I love to make the soup, but it takes forever and yours looks better!

    • We have been cooking 2 bags worth in our 6 quart Instant Pot for 35 minutes with the water filled to the halfway line. However, the top beans always turn out crunchy and I am afraid to add too much extra water since they say to stick under 1/2 way full when making beans. But then cook up about 4 diced peppers and 2 diced onions in our dutch oven on the stove top and add in the cooked beans along with 2-4 cups of veggie broth. And let it simmer until all of the beans are fully cooked.

      Oh and we add in the “ham” seasoning packets once the beans go into the dutch oven!
