Recipe: Brian’s Quick Greek-Style Chickpeas + “Greek Bowl” & Salad Ideas (Vegan)

A few months ago, I heard about these Greek Chickpeas at Trader Joe’s and really wanted to try them out. Unfortunately, they come in a can that is literally packed with oil. We did end up buying one can to try out, and I loved the simplicity of the flavors, but there was just SO much oil. Of course Brian went home and started experimenting with his own oil-free version, and that ended up evolving into today’s recipe!

This recipe is super quick to throw together and can be eaten as a side dish or added to other ingredients to make a lovely salad or Brian’s “Greek Bowl,” as he called it in our What We Eat In A Week video back in January.

The star of the dish is, of course… chickpeas! We buy our cans of “no-salt added” garbanzo beans from Whole Foods for 89 cents per can.

You’ll also need a few wet ingredients, which you’ll want to mix in with the chickpeas first to give them a nice coating for all of the dry ingredients to stick to.

After that, it is literally as simple as adding in the dry ingredients and giving it a final stir.

Recipe: Brian's Quick Greek-Style Chickpeas

Ingredients

  • – 2 x 15oz cans of garbanzo beans; no-salt added if possible, drained
  • – 1 Tbsp red wine vinegar
  • – 1 Tbsp lemon juice
  • – 1 tsp tahini
  • – 2 Tbsp nutritional yeast
  • – 1 tsp onion powder
  • – 1 tsp garlic powder
  • – 1 tsp dried mint
  • – 1 1/2 tsp dried oregano
  • – 1 tsp dried parsley
  • – 1/4 tsp black pepper
  • – OPTIONAL: 1/4 tsp salt

Directions

  1. Add drained chickpeas to a large mixing bowl.
  2. Add red wine vinegar, lemon juice and tahini to chickpeas. Stir to coat.
  3. Add remaining ingredients (dry seasonings) to chickpeas. Stir to coat.
  4. Enjoy as is or try out the add-in ideas below!
  • Optional add-ins to make a “Greek Bowl” or salad:
  • – Riced cauliflower
  • – Brown rice
  • – Lettuce
  • – Diced red onion
  • – Sliced olives
  • – Sliced cherry tomatoes
  • – Diced bell peppers
  • – Chopped cucumber
  • – Vegan Tzatziki sauce (we like the one from Good Foods, which we find at our local Target store)
  • – Brand New Vegan’s Tofu Feta
  • – Caesar dressing from The Healthspan Solution


I really love the flavor of these Greek-style chickpeas on their own, but if you want to bulk it up a bit and make it into a meal, check out the add-in suggestions in the recipe above.

Brian’s favorite way to make up his “Greek Bowl” is to heat up a frozen bag of riced cauliflower and then top with a generous portion of the chickpeas, along with some diced red onion, sliced black olives and Good Foods plant-based Tzatziki sauce.

I really enjoy these on a salad, along with some tofu feta. You don’t really need a dressing since the chickpeas are coated with a ton of flavor, but I did try adding a small amount of the Caesar dressing from The Healthspan Solution and it was SUPER good!

    I made these chickpeas and O M G! They were easy first of all, but the flavor is very complex, and very Greek! I love these chickpeas! I’m from Michigan where are a bunch of Greek restaurants and Coney Island that serve Greek Salads, but I think the one I am going to make with these and @brandnewvegans Greek dressing and tofu feta is going to be 20x better and much healthier! Thanks for this recipe Brian!
