We’re back for another episode of the Lisa & Jessica Show! 🙂 We’ll just call it that until we figure out a name. Thank you to everyone who watched the first episode of this weekly series. It was great to get a ton of feedback and suggestions as well. Please keep them coming!

This week I checked in with Lisa to see how she was doing after her first week of incorporating more whole food, plant-based principles into her already vegan diet. I think she’s off to a really amazing start and is a great example of how you can make changes over time to work towards your goals instead of just completely cutting everything out all at once.

Lisa’s Changes For Week One

We started the video with a rundown of some of the changes she has made over the past week.

Here are a few highlights:
– Reduced sugar intake by an estimated 80%
– Cut out most processed bread products, including her favourite… bagels!
– Stopped her habit of boredom snacking on random packets of “crisps” (chips)
– Stopped using added oils for cooking (instead using a splash of water when needed)
– Cut back peanut butter intake by about 80%

A big source sugar for Lisa had been these “accidentally vegan” mince pies from ASDA. Apparently they are an essential British Christmas treat, so maybe one day we can get Brittany Jaroudi to make a whole food, plant-based version. 😁 For now, Lisa has stored them away in the freezer.

Week One Meal & Recipe Highlights

Lisa sent me some great food photos throughout the week, so I thought I’d share some of the highlights.

Let’s start with these homemade oatcakes she made following this recipe. She ate these with a thin spread of peanut butter to kick her cravings and satisfy the need for some crunch!

She also raved about this dill hummus she threw together and used as a salad dressing. I’m so proud. 😭

I know you all will want the recipe, but here’s the thing… Lisa isn’t great at following recipes and exact measurements. She’s kind of a “free spirit” in the kitchen. 😁 She says the ingredients are chickpeas, soaked cashews, garlic granules, dill, oat milk and optional salt to taste – blended to the consistency you like. Brian and I will experiment with this and let you know if we can nail down a recipe.

After one of our viewers from last week suggested that she make her porridge (aka oatmeal) up more like a dessert, she made this amazing looking version with chopped bananas, pecans, cinnamon and a carob sweetener.

Then there was the tofu. She sent us a couple of video clips and Brian became obsessed with her idea. As a vegan for the past 6-7 years, she has been making tofu in this top secret way for a while. Brian wouldn’t let us discuss it because he’s now working on a top secret recipe using Lisa’s methods. 😂

On my end, the highlight of the week was definitely these Tasty Glazed Green Beans that Brian threw together. They were so good, I just had to get him to put together a video for it! You can get a printable recipe and watch the video here.
