It has been a while since we’ve done a “What We Eat In A Day” video, and since we are getting “Back To Basics,” we thought we’d show you what we’ve been eating this week! So make yourself a nice giant bowl of salad and watch the video to see what we ate today (well, technically Friday).

Up First… Breakfast!
I’ve been eating oatmeal as my first meal of the day, usually around 11am or so. If you’ve seen our Oatmeal Challenge video, you’ll recognize the process I used here.
I like to microwave 1/2 cup of old-fashioned rolled oats in a 4-cup Pyrex bowl with 2/3 cup of water for 2 minutes and 30 seconds. If you do this, DO NOT use a smaller bowl… just trust me. The oats expand a lot while they are cooking and it is easy to make a really giant, sticky mess. Not that I’ve ever done that. 😬
Afterwards, I removed it from the microwave (be CAREFUL – those bowls get HOT!) and stirred in a ripe banana. This adds enough sweetness for me, but you could also add in some date paste or maple syrup if you like.
Now… we are in WEEK ONE of getting back to the basics of our whole food, plant-based diet after being on a rollercoaster over the past few months. So please forgive me for starting my day out with chocolate.
I added a spoonful of 100% Pure Cacao Organic Dark Unsweetened Chocolate Chips to my oatmeal. I got these from Santa Barbara Chocolate after hearing Brittany Jaroudi talk about them. They are quite expensive, but it has taken me MONTHS to get to the bottom of the giant bag. Trader Joe’s also came out with a similar product recently, so I’ll be trying those out next.
Brian kept his breakfast pretty simple as usual! He toasted up two slices of Ezekiel 4:9 Sprouted Grain Bread.
Then he literally just split a banana in half and added a dash of cinnamon and nutmeg. Ta-da… fancy banana sandwich! He didn’t take a picture, so here is a previous one he made using the Ezekiel Cinnamon Raisin Bread.
Lunch Time!
A few hours later, we decided to take our lunch up to the rooftop of our building to enjoy some time away from the dogs. 😅
We both ate a bowl of Brian’s Super Tasty Vegan Chili. I added a dollop of our Super Smoky Hummus to mine as well. I really like the contrast between the hot chili and the cold hummus.
We both had an apple as well. Brian ate a Fuji and I had my favorite, a Pink Lady! If you haven’t seen us try EVERY apple, check out THIS video.
I’ve been drinking a nice cup of hot tea once or twice a day to curb my hunger. Today I had a cup of Twinings Lady Grey with nothing added.
Going For A Walk
If you watched our “Back To Basics” Tip video, we suggested getting in some activity. So we decided to take a little walk to our P.O. Box to see if you lovely people had sent us anything.
It was a great evening in St. Louis and we got to see the sun setting over the Arch.
We had a bunch of cards and a few packages waiting for us!
Then we stopped by the grocery store to pick up a few things we needed for the weekend.
Salad Time!
After all of that walking, we were ready for some SALAD, so we got out our giant almost-as-big-as-our-heads bowls.
We get a lot of questions about the bowls we like to use for salad. My favorite is an 18-cup Tupperware Bowl you can get in this set of mixing bowls. It leaves plenty of space to stir everything up without making a mess.
We always have chopped veggies prepped and ready to go in our refrigerator. You can check out our salad prep video for more about our weekly prepping process!
Today our salads included the following veggies:
– One 6oz bag of Aldi Butter Lettuce (split between our two salads)
– Half a head of iceberg lettuce (split between our two salads)
– Red onion (small dice using our veggie chopper)
– Celery (small dice using our veggie chopper)
– Carrots (shredded using our food processor)
– Zucchini (julienned using our mandoline slicer)
– Banana Peppers (We remove the seeds, slice peppers using our food processor, put into a mason jar and cover with white vinegar + a teaspoon of salt. Then shake and let sit at least 24 hours before eating. Be CAREFUL handling the seeds and insides because it will burn!)
– Chopped dates (okay I guess these are a fruit not a veggie)
In addition, we used the following toppings:
– Nutritional yeast
– California Balsamic Sweet Heat (for me)
– California Balsamic 7-Herb Italian (for Brian)
– Penzey’s California Seasoned Pepper (for me)
– Black Sesame Seeds (for Brian)
For dressing, we both used our Super Smoky Hummus. It blends really well with the balsamic vinegar!
It is always fun to eat such beautiful food and these salads did not disappoint!
After Dinner Treat
After dinner, I had some of my Three-Ingredient Chocolate Nice Cream. I made a big batch earlier in the week and already had them divided out into my single serving cups. This strategy really helps me avoid overeating on the tasty chocolate goodness! It is the perfect treat at the end of the night.
If I’m feeling the munchies later on, I’ll usually just make another cup of hot tea.
Brian actually made a bowl of oatmeal for his after-dinner treat, but did not take any photos. He used a similar method to what I did for my breakfast above, but added a splash of Bourbon Vanilla we got at Trader Joe’s instead of the chocolate chips.

Wow!
This seems like a strict diet and not so much to eat BUT i do understands its only under a period of time while loosing weight. Its not sustainable in the long term to eat this way but when you have reached your goal i hope you can go for at least one more meal a day haha. Anyway, i love your YT channel and i think your motivation and devotion is great. You are a super sweet couple also <3 love from a wfpb swede 😉
